Serendipity: the effect by which one accidentally discovers something fortunate, especially while looking for something else entirely.

I was following this recipe for oatmeal chocolate chip cookies and had a serendipitous occurrence. First of all, I substituted applesauce and a tablespoon of button for the shortening. Then, I thought the batter was a bit too moist (yick) so I added some rice crispies (about a cup or so). I made the most wonderful cookies! It is amazing - they are crispie on the outside and soft on the inside. I love it when things like this happen!

On a weather related note... we didn't get 1/2 the snow that was predicted, but it is darn cold! This house isn't sealed very well we are finding - we are just wearing sweaters and feffs (for those that own them).

We got snow and all of Portland is paralyzed. For the first time ever they shut-down all of OHSU and Legacy (except for hospitalized pts) so I am OFF . . . Stay warm.

Eeew... please replace that icky green compact fluorescent bulb with a warm incandescent lamp. Then try that photo again... You'll love the results.
